The making of a king cake

1. Three generations of Haydels – including Dave Jr. and David Haydel – have been baking in New Orleans since 1960.

2. The ingredients are blended in an industrial-size mixer. Each batch is enough for just over 100 king cakes.

3. Divided into cake-size portions, the dough – which is actually a sweet yeast bread – is allowed to rise.

4. A machine helps the bakers roll out the dough in preparation for braiding.

5. Filled with cinnamon-sugar, braided and looped into an oval, the dough is left to rise a second time.

6. The cakes are loaded into the oven for baking.

7. Each cake is decorated in Mardi Gras colors of purple, green and gold and one toy baby ''king'' – to represent Jesus.
